Meal Planning Tip #4: Make enough to last a couple of days!
Our family is big, I mean BIG oatmeal eaters! We try to bring our lunches everyday to work and part of this includes breakfast! I’d say 50% of our breakfast for the week consists of oatmeal (the other 1/2 includes green smoothies!) A special kind of oatmeal! Not your ordinary oatmeal, not your pre-packaged instant oatmeal (yuk!).
We make what’s called an “oatmeal bake”, with steel cut oats. We always make enough to last our little family of three for 3-4 days! My daughter loves it so much she wakes up looking for “oa–meeel” haha.
This is way healthier. According to LiveStrong (click link to read more!) they offer an excellent source of protein (and fibre – what mama’s don’t need that!) and keep you feeling full and energized.
Our favourite recipe (really can be modified with all of yours favs things) Step 1: In a casserole dish, add the following ingredients in this order:
- Berries (fresh or frozen, use whatever you have on hand!)
- Almonds (sliced thinly)
- Shredded coconut (not too much because it can be quite sweet)
- Sprinkle cinnamon
- Cover the above ingredients with steel cut oats (1/2 c – 1 cup)
- Add coconut milk (or water)**Remember, for every 1 cup of steel cut oats you need about 1 1/2 cups of liquid
Step 2: Place in oven at 375 degrees for 25 minutes. At 12-15 minutes, feel free to check your oatmeal and stir. I never stir until this point (no particular reason, just a personal preference).
An alternative is to prepare the oatmeal on the stove in a medium size pot, if you choose to do this feel free to follow the same recipe.
