Meal Prep Reveal #1: Have your main ingredients already!
Who would have thought that by simply combining four fresh ingredients, you end up with endless meal possibilities?
Basil+Olive Oil+Garlic+Parmesan = Pesto
(See notes below for ways to make this dinner even easier!)
Our daughter absolutely loves Pesto! She eats it at least once a week, and usually on quinoa or lentil pasta. We also make it from scratch; we mastered a simple and flavourful recipe (oh, did I mention toddler friendly?).
How do we ensure that the taste is just right? There is nothing special about it, and really pesto (as we have learned) can really be anything. And it takes under 15 mins to prepare!
Here is one of our favourite recipes
(with a couple of variations!):
- 1 cup of fresh Basil (we have also tried Arugula and Parsley)
- 1 garlic clove
- 1/4 cup of parmesan cheese (Dairy free cheese, Daiya works well too!)
- 1/2 cup of olive oil (avocado oil also adds nice flavour)
- 1/4 cup of pine nuts (trying substituting with walnuts or sunflower seeds! Extra yummy)
Add all of the above ingredients together in a blender or chopper. Mix together until smooth. Viola! Delicious, simple pesto.
To complete our dinner process, we love to sauté onions (brown) and peppers (not too long, just enough to soften), mix the pesto into the veggies.
We prefer to add the cooked pasta right into the pesto and veggie mix. When you are ready to serve, lightly grate your fresh parmesan on top.
Note: For busy families, we have found that freezing the pesto in ice cube trays really makes for a quick and convenient dinner.
